Truly raw puddings are a light yet satisfying combination of young coconut meat and other flavorful ingredients, sweetened with your choice of agave nectar, raw herb stevia or concentrated stevia extract. Pudding varieties: Please note: Coconut custards made using raw herb stevia need to be retextured after thawing using a vita mix or processor. Raw herb stevia, while pure, has a distinct green tea flavor and does not blend well with dark chocolate or citrus flavors, however stevia extract does not have the raw flavor and will work well in these dishes.
